Shane Bailey’s Kids in the Kitchen Chocolate Mousse

Serves: 4


200g good quality chocolate
25g butter
3 eggs
Vanilla bean
250ml cream


Melt the chocolate and butter in a bowl over pot of simmering water, then cool slightly.
Stir yolks and vanilla into chocolate – don’t over stir.
Whip cream, fold half into the mixture, then the other half.
Whip egg whites until soft peaks, fold half into mix then the other half.
Place in glasses or containers, kids to garnish with fruit and macadamia.
