Restaurant 98 Sue Mitchell’s Spicy Chicken Wings
Ingredients
2kg Chicken wings
200ml Olive oil
10gm Sichuan pepper
3gm Staranise
10gm Hot dried chilli
21gm Hot paprika
10gm Cajun seasoning
10gm Pepi pepi mix
10gm Ground coriander
10gm Ground cumin
Lemon rind from ½ a lemon
1 Fresh small red chilli deseeded
Method
Blend the spice mix together for about 3 minutes to break down.
Add the lemon and staranise and blend together.
In a bowl add the chicken wing oil, then add the spice rub into the chicken wings allow to sit for 12 hours.
Grill then bake in the oven until cooked.
Serve with a dipping sauce of natural yoghurt, sundried tomato and cucumber.
