Executive Chef at The Waterline Restaurant, Keppel Bay Marina for over a decade, Matt began his culinary career in Tropical North Queensland, working his way down the coast and eventually settling in Keppel Bay.

Matt’s signature style is a blend of traditional French techniques and Japanese cuisine where the ingredients are the stars. He believes in maintaining the natural inherent flavour of ingredients through carefully constructed dishes.

Known as a champion of local produce, Matt’s menus showcase the best local Seafood and locally produced Banana Station Beef.

His Banana Station Beef Signature Dish has won the Best Beef Signature Dish Restaurant Award at Beef 2012, 2015 and again most recently Beef 2018.

The Waterline Restaurant was also recently awarded Gold for Tourism Restaurant and Catering Services at the Queensland Tourism Awards, and Best Café Dining NQ at the Qld Restaurant and Catering Awards and will be representing Central Queensland as a Finalist and the National Restaurant and Catering Awards in November.
